September 9 (today!) is National I Love Food Day. Yes, thatâs a real holiday. When you think about it, isnât every day I Love Food Day when you’re a food lover?
Either way, if thereâs one day a year to go all out, this is it. So why not take the most crave-worthy flavors and put them together into one amazing dessert worthy of a day devoted to food?  Peanut butter bacon cookies sandwiched around strawberry chocolate chip ice cream, shaped into piggies. I canât think of a more gluttonous way to celebrate I Love Food Day!
Peanut Butter Bacon Cookie Strawberry Chocolate Chip Ice Cream Sandwiches
youâll need:
-strawberry ice cream, softened
-mini chocolate chips
–pig silicone mold
cookie ingredients:
-1/2 cup (1 stick) unsalted butter
-1 cup peanut butter
-1/2 cup white sugar
-1/2 cup brown sugar
-1 egg
-1/2 teaspoon vanilla
-1-1/2 cups all-purpose flour
-1 teaspoons baking soda
-pinch of salt
-2/3 cup bacon, cooked and crumbled
-extra sugar
In a bowl stir together the strawberry ice cream and the mini chocolate chips. Spoon into the silicone pig molds and keep in the freezer until solid.
Preheat the oven to 350 degrees and prep baking sheets with silpats or parchment.
In a bowl, cream the butter, peanut butter, white sugar and brown sugar.
Add the egg and vanilla.
In a separate bowl whisk together the flour, baking soda and salt, then add to the wet ingredients until just combined.
Stir in the crumbled bacon pieces.
Roll dough into a 2-inch balls and place onto the prepped baking sheets.
Dip a fork into sugar and place crisscross marks across the balls of dough.
Bake for 10 minutes then let cool on a wire rack.
Once the cookies are cool, unmold the ice cream piggies and place onto the back side of a peanut butter cookie. Top with a second cookie to serve.
