Gingerbread Borg Cookie Box

GingerBORG Cube
– 3 cups all-purpose flour
– 1 teaspoon baking soda
– 1 teaspoon ground ginger
– 1/2 teaspoon cinnamon
– 1/2 teaspoon nutmeg
– pinch of salt
– 1 cup (2 sticks) unsalted butter, softened
– 1 cup brown sugar
– 1 egg
– 3 Tablespoons molasses
– 1-1/2 teaspoons vanilla
– icing

In a medium bowl whisk together the flour, baking soda, ginger, cinnamon, nutmeg and salt. Set aside.

In the bowl of an electric mixer cream the butter and brown sugar until combined.

Add the egg, molasses and vanilla, then slowly add in the dry ingredients just until the dough comes together.

Split the dough into two and wrap in plastic wrap. Chill until you are ready to use.

Preheat the oven to 350 degrees. Prep baking sheets with silpats.

Roll out the dough to about 3/8 inch thick. Make sure the cutter* is well floured, cut out the shapes and transfer onto the prepped baking sheets. You will need 6 sides to make the cube.

Bake for 10 minutes, let cool on a wire rack.

Once cool use the icing on the sides of the pieces to form a cube. Glue the top in place or leave it off to make a container.
