TEENAGE MUTANT NINJA TURTLES Sushi Pizza

When you’re a young anthropomorphic reptile, fighting for justice takes a lot of energy and can make you very, very, hungry. While Italian is the food of choice for the crime fighters, a turtle can’t live on pizza alone. With all that comes with being an underground warrior, sometimes you just want to eat light.

These sushi pizzas have a grilled rice crust, making it both chewy and crunchy. Then they’re topped with fresh ingredients and sauces with a little kick. Change up the toppings to customize it to your tastes. Perfect for an Teenage Mutant Ninja Turtle on the go.

TMNT Sushi Pizza
Sushi rice ingredients:
2 cups short-grain rice
1/4 cup rice vinegar
2 Tablespoons mirin (sweet cooking wine)
2 Tablespoons sugar
1 Tablespoon salt

Pizza toppings:
2 teaspoons mayonnaise
½ teaspoon Sriracha
Kamaboko (fish cake), sliced
Cod roe
Cucumbers, diced
Shichimi, (Japanese pepper)

TMNT toppings:
1 teaspoon wasabi sauce
Cucumber, sliced
Shrimp, sushi style
Mayonnaise
Seaweed

Cook the rice in a rice cooker according to the manufacturer’s directions. While still hot, stir together with rice vinegar, mirin, sugar and salt. Let cool slightly.

Form into 3-inch round, flat discs, approximately ½-inch thick.

Grease a pan with oil and fry the rice discs until browned, a few minutes on each side.

For the pizza stir together the mayo and Sriracha and spread it onto the rice. Add the sliced kamaboko, cod roe, diced cucumber and sprinkle with Japanese pepper to finish.

For the turtle pizza, spread wasabi sauce on the rice. Lay down the cucumbers, then lay the shrimp across the center. Use mayonnaise and seaweed to form the eyes. For the mouth use seaweed and a small piece of kamaboko for the tongue.
