After twenty tears, Independence Day has returned with a new sequel: Independence Day: Resurgence. While many things have changed in twenty years (RIP Will Smith’s character), one thing remains unchanged: the onscreen magnetism of Jeff Goldblum.
From his roles in iconic films and television shows to his live jazz performances and sheer charisma, Goldblum has maintained a steady fandom for years, and the return of David Levinson is no exception. To honor the man, the myth, the legend, we’re serving up a holiday treat featuring a red, white, and blue Independence Day theme. These spectacular fireworks-inspired cupcakes are the perfect treat for celebrating Fourth of July or simply… Jeff Goldblum.

Independence Day Cupcakes
Youâll need:
-Jeff Goldblum images, printed
-Popsicle sticks
-Red, white and blue sprinkles
-Pop Rocks candy
-frosting
Cupcake ingredients:
-3/4 cup (1-1/2 sticks) unsalted butter
-2 cups sugar
-3 eggs
-1 Tablespoon vanilla
-2-1/4 cups cake flour
-1 teaspoon baking powder
-1/2 teaspoon baking soda
-Pinch of salt
-1 cup buttermilk
-Red food gel dye
-Blue food gel dye
Preheat the oven to 350 degrees. Prep a cupcake pan with liners.
In a medium bowl, whisk the cake flour, baking powder, baking soda and salt. Set aside.
In the bowl of an electric mixer, cream the butter and sugar until fluffy.
Add the eggs one at a time until incorporated, then add the vanilla.
Alternate the buttermilk and the dry ingredients until combined.
Once the batter has come together, separate it equally into 3 bowls.
Leave one bowl of batter as is, color the second bowl of batter red and the last bowl blue.
Once the batter is dyed, into the liners add a Tablespoon of red batter, followed by a Tablespoon of the white, then topping it off with a Tablespoon of the blue. Repeat once more, then use a skewer to make a figure-8 motion to swirl the batters together.
Bake for 15-17 minutes until done depending on your oven. Let cool on a wire rack.
Frost the cooled cupcakes, then add red white and blue sprinkles and Pop Rocks. Tape the Jeff Goldblum printouts to popsicles sticks and add one to each cupcake before serving.
