Rejoice! The first Thursday of April is National Burrito Day… although here at Nerdist, everyday is burrito day! We enjoy our burrito as often as we can, and that means celebrating geekdom and nerd pursuits to the fullest. Burritos can be made a variety of ways, and just like a piece of geek culture, there is no wrong way to appreciate one.

Nerdist Burrito
Youâll need:
-Flour tortilla
-Beans
-Cilantro Lime Rice (recipe below)
-Chicken (recipe below)
-Guacamole
-Cheese
-Salsa
-Hot sauce
Onto a warmed tortilla, add beans, rice, chicken, guacamole and hot sauce.
Wrap and eat.
Cilantro Lime Rice
ingredients:
-1 cup long grain rice
-2 teaspoons olive oil
-2 Tablespoons onion, diced
-1 clove garlic, minced
-2 cups chicken broth
-1/8 cup fresh cilantro, chopped
-Juice of half a lime
-Salt and pepper
In a saucepan sauté the rice, onion and garlic in the olive oil.
Add the chicken broth and bring to a boil over high heat. Reduce to a simmer and cook until rice is tender, 25-30 minutes.
Turn off the heat, stir in the cilantro and lime juice, and season with salt and pepper to taste.
Grilled Chicken
Ingredients:
-1 chicken breast
-2 teaspoons olive oil
-1 teaspoon chili powder
-1/8 teaspoon garlic powder
-1/8 teaspoon onion powder
-1/8 teaspoon cumin
-Pinch of salt
-Freshly ground pepper
In a small bowl, stir together the chili powder, garlic powder, onion powder, cumin, salt and pepper.
Rub the chicken breast in olive oil, then season with the spice mixture and place onto a hot grill. Cook through until no longer pink.
Dice the chicken and use for burrito filling.
