Gotta Catch These Pokémon Mewtwo Cookies

February 27 marks the 20th anniversary of Pokémon. After two decades the fandom is stronger than ever and shows no signs of slowing down. Poke-fans gotta catch all the games, toys and characters.

Mewtwo is the first ultra-powerful Pokémon fans got to use a Master Ball on. And if you could tap into his psychic abilities, you would be able to read his one constant thought: cookies are delicious. Add these cookies to your Pokédex and they’ll make you the very best, like no one ever was. So bake up some Mewtwo cookies and get ready to celebrate Pokémon’s 20th!

Pokemon Mewtwo Cookies

You’ll need:
– Mewtwo cookie cutter*
– white icing
– black icing
– purple icing

Ingredients:
– 3 cups all-purpose flour
– 1/2 teaspoon baking powder
– pinch of salt
– 1 cup (2 sticks) unsalted butter
– 1 cup sugar
– 1 egg
– 1 teaspoon vanilla
– purple food gel dye

In a bowl whisk together the flour, baking powder and salt. Set aside.

In the bowl of an electric mixer cream the butter and the sugar. Add the egg and vanilla.

Add the flour mixture until just combined.

Take half of the dough and color with just a touch of purple gel food coloring and mix until a light lavender color is achieved.

Mix the other half of the dough with a fewdrops of purple food gel dye until the dough becomes a dark purple.

Wrap up the doughs in plastic wrap and refrigerate until you are ready to use.

Preheat the oven to 350 degrees. Prep baking sheets with silpats or parchment.

Roll out the lavender dough to 3/8-inch. Flour the Mewtwo cookie cutter, cut out the cookies, and move to the prepped baking sheets. Cut out the area around the tail.

Roll out the purple dough to 3/8-inch. Flour the MewTwo cookie cutter, press into the dough and lift out the tail area, placing it inside the previously cut lavender dough cutouts, forming one complete symbol.

Bake for 10 minutes and let cool on a wire rack.

Using a #3 tip and white icing, fill in the eye area. Add a dot of purple icing and dot of black with #2 tips for the rest of the eye details. When the icing is dry the cookies are ready to serve.
