Celebrate National Blueberry Pancake Day with STAR TREK Starfleet Pancakes

It’s been a long road, getting from there to here… but tomorrow is January 28, aka National Blueberry Pancake Day! Though pancakes are a beloved human breakfast food, Vulcans are not really into fruity flapjacks.

In fact, in Star Trek: Enterprise when Phlox hands T’Pol a pancake during breakfast, she looks downright disgusted. Part of it may be the way he rolled it up and presented it with his hands (no thanks). Or MAYBE it’s because they weren’t delicious buttermilk pancakes studded with fresh blueberries, filled with a sweetened cream cheese, and topped off with a pat of Starfleet butter.

Fluffy and irresistible, these homemade Starfleet Blueberry Pancakes are easy to make — even without a Food Replicator.

Starfleet Blueberry Pancakes
(makes 12)

ingredients:
– 1 cup cream cheese
– 2 Tablespoons powdered sugar
– 1 Tablespoon lemon zest
– 2 cups all-purpose flour
– 2 Tablespoons sugar
– 2 teaspoons baking powder
– pinch of salt
– 2 cups buttermilk
– 2 eggs
– 2 teaspoons vanilla
– 2 cups blueberries
– 4 Tablespoons butter, softened (for molds)

In a small bowl stir together the cream cheese, powdered sugar and lemon zest. Set aside.

In a separate bowl whisk together the flour, sugar, baking powder and salt.

Make a well and stir in the buttermilk, eggs and vanilla until just combined. Fold in the blueberries.

Place a griddle on medium-high heat and grease the pan with a little bit of butter.

Ladle out the pancake batter. Add a dollop of the cream cheese mixture into the center of the pancake then top with more batter.

When tiny bubbles start to form and pop on top of the pancake, flip over and cook until done.

To make the Starfleet butter, spoon the softened butter into the molds and place in the freezer for 10 minutes or until frozen. Pop out of molds and place on top of hot pancakes to serve.
