Celebrate a Mathematical Thanksgiving with Pumpkin Pi Pie

Listen, when nerds make pie for Thanksgiving, it can’t be just an ordinary pie. It must be served with a scoop of ice cream and a dollop of math humor.

When your family is heading into their second serving of stuffing, sneak into the kitchen and cut yourself a sliver of sweet, irresistible Pumpkin Pi Pie. Leave a little hand piped message in whipped cream and while everyone’s trying to figure it out, settle yourself into a nice tryptophan food coma on the couch. Ahh.

Pumpkin Pipie dough ingredients:
2 cups all-purpose flour
– 2 teaspoons sugar
– 1/2 teaspoon salt
– 6 Tablespoons cold butter, cut into cubes
– 4 – 6 tablespoons ice water

pie ingredients:
1 (15oz) can pumpkin
– 1 (8oz) package cream cheese
– 1 cup sugar
– 2 eggs
– 1/2 teaspoon vanilla
– 1 teaspoon cinnamon
– 1/4 teaspoon nutmeg
– 1/4 teaspoon cloves
– pinch of salt
– whipped cream for garnish

In a bowl whisk together the flour, sugar and salt.

Using a pastry cutter, cut the cold butter into the flour mixture until mealy.

Add ice water by the Tablespoon until the dough comes together.

Wrap in plastic wrap and chill for 30 minutes.

Preheat the oven to 350 degrees.

Roll out the dough onto a floured surface, flouring the rolling pin and the top of the dough as well. Roll to fit your pie pan.

Place rolled dough into the pie pan, pressing to fit. Make a decorative edge, trimming off the overhang. Pierce the dough all over with a fork.

Line the crust with foil, and fill with pie weights. Bake for 10 minutes, remove the foil and let cool slightly.

In the bowl of an electric mixer stir together the pumpkin, cream cheese and sugar.

Add the eggs vanilla, cinnamon, nutmeg, cloves and salt.

Once incorporated, pour the mixture on top of the prepared crust.

Bake for 50 minutes or until set.

Let cool on a wire rack.

With whipped cream in a piping bag, write the equation on top the pie. Taste first if you wish, then serve.
