Make Cap’n Crunch Chicken For National Cereal Day

March 7 is National Cereal Day! Make the most of the holiday by having cereal for breakfast, cereal for lunch, cereal for – ok, it’s hard to pass up a bowl of cereal any time of day but if you want something a little more substantial around dinnertime, this recipe will give you the best of both worlds.

Cap’n Crunch cereal makes a great coating for chicken, along with a few spices it becomes a sweet and savory, crave-worthy main dish. You can even serve it up in bowls to really celebrate. Happy National Cereal Day!

Cap’n Crunch Chicken
(serves 4)
ingredients:
– 8 chicken drumsticks
– 1 cup all-purpose flour
– 1 teaspoon onion powder
– 1 teaspoon garlic powder
– 1 egg
– 1/2 cup whole milk
– 3 cups Cap’n Crunch cereal
– 1/2 cup panko bread crumbs
– salt and pepper

Preheat the oven to 425 degrees. Prep a sheet pan by lining it with foil and place a wire rack on top.

In a shallow dish whisk together the flour, onion powder, and garlic powder. Set aside.

In a separate bowl beat the egg and the milk. Set aside as well.

Place the Cap’n Crunch in a freezer bag and crush with a rolling pin, add in the panko crumbs.

Dredge the chicken in flour mixture, shaking off the excess, then dip into the egg mixture. Place into the bag of crushed cereal and shake to coat.

Place the chicken pieces on the prepped rack, season with salt and pepper. Bake for 35 minutes or until juices run clear.

Now, not only will your chicken be delicious, it won’t get soggy in milk! Now that is a National Cereal Day miracle.
