Cookie Crisp Cookies

I believe it was Nietzsche who said, “Me want cookie.” Nope, I was wrong… it was Cookie Monster. In any case, the longing for a sweet, crunchy dessert is often hard to suppress, believe me.

When Cookie Crisp cereal was first invented, that wanting seemed to just get worse. Suddenly America was able to eat cookies from morning til night, and the nation’s cookie desire only increased. For all you cookie lovers out there, I’ve combined that craving into the ultimate meta dessert, a chocolate chip cookie studded with Cookie Crisp cereal. No need to thank me, cookie fans — I’m here to make all your cookie dreams come true.

Cookie Crisp Cookies recipe-07062015

Cookie Crisp Cookies
(makes approximately 4 dozen cookies)
ingredients:
-2-1/2 cups all-purpose flour
-1 teaspoon baking soda
-1/2 teaspoon kosher salt
-1 cup (2 sticks) unsalted butter, softened
-1 cup brown sugar
-3/4 cup white sugar
-2 teaspoons vanilla
-2 eggs
-1-1/2 cups Cookie Crisp cereal
-1 cup chocolate chips

Preheat the oven to 350 degrees and prep baking sheets with silpats or parchment.

In a large bowl whisk together the flour, baking soda and salt. Set aside.

In the bowl of an electric mixer cream the butter, brown sugar and white sugar.

Add the vanilla and the eggs until combined.

Spoon in the flour until the dough comes together.

Carefully fold in the Cookie Crisp cereal and chocolate chips by hand.

Form the dough into Tablespoon-sized balls and place on the prepped sheets 2 inches apart. Press in more Cookie Crisp cereal on top, if desired.

Bake for 10 minutes until browned depending on your oven. Let cool on a wire rack.
