Celebrate Mardi Gras with Mini Gambit King Cakes

Laissez les bon temps roulez, it’s Mardi Gras time! The time of year when New Orleans lets loose, parties hard, and eats lots and lots of King Cakes.

King Cakes are a Mardi Gras tradition, a ring of dough filled with a cinnamon filling, topped with icing, and sprinkled with sugars that signify purple for justice, green for faith and gold for power. The focal point of the King Cake is that there’s a tiny toy baby hidden inside each pastry. Whoever finds the baby has good luck for a whole year, providing they don’t choke on it. Seems hazardous.

This is an incredibly easy recipe that uses canned cinnamon roll dough, but what makes it extra special is the toy baby is replaced by one Remy LeBeau, a.k.a Bandit: New Orleans native, Le Diable Blanc, mutant card-thrower, Rogue lover, and now King Cake baby. (makes 3)

ingredients:
– 1 can refrigerated cinnamon rolls
– purple sanding sugar
– yellow/gold sanding sugar
– green sanding sugar
– 1 clean Gambit mini figure

Preheat the oven to 375 degrees and prep a baking sheet with a silpat or parchment.

Open the can of refrigerated cinnamon rolls and separate into three equal amounts.

Roll the pieces into strips then loosely braid them into a circle. Make three of these and place them on the prepped baking sheet.

Bake for 15 minutes. Let cool slightly on a wire rack.

Use the frosting provided in the can to pour evenly over the three rings of dough.

Sprinkle purple, gold and green sanding sugar alternately around the ring over the frosting.

Nestle the Gambit figure into the center of the King Cake and serve.
