This year Batman Day falls on the exact same day as National Pancake Day. Itâs if it all the bat-stars aligned, just so.
To celebrate these two important days in the month of September, it only makes sense to send out the Batman symbol in the form of a pancake. Not just any pancake–a pancake made for the guardian of Gotham, a pancake… filled with bacon.
Yes, this is the signal Commissioner Gordon sends out when itâs time for brunch. A fluffy pancake topped off with crispy chopped bacon makes a delectable call out to the Caped Crusader. Whip up some Batman Bacon Pancakes and enjoy Batman Day and National Pancake Day this Saturday, September 26.
Batman Bacon Pancakes
ingredients:
-2 cups all-purpose flour
-1 Tablespoon sugar
-1 Tablespoon brown sugar
-2 teaspoons baking powder
-1/2 teaspoon salt
-2 eggs
-1-1/2 teaspoons vanilla
-1-1/2 cups whole milk
-1 Tablespoon melted butter (plus more for the pan)
-6 strips of bacon, cooked and chopped fine
In a bowl whisk together the flour, sugar, brown sugar, baking powder and salt.
Make a well and stir in the eggs and vanilla, adding the milk until just combined. Then stir in the melted butter.
On medium high heat, prep a griddle by greasing it with butter. Pour the batter into 5-inch circles.
Once small bubbles appear in the batter and start to pop, flip the pancakes and cook until browned.
Using a template and a clean x-acto knife, cut out the Batman symbol from the center, just pulling off the top layer of the pancake.
Add the chopped bacon to form the symbol, and serve.
